Greenery Smoothie

I call this drink Greenery Smoothie to honor and celebrate the idea behind Pantone’s color of the year 2017. Greenery symbolizes the re-connection one seek’s with nature, one another and a larger purpose.

This smoothie is easy to make and filled with nutrients that our body needs.

Ingredients

Baby spinach – 1 cup

Kiwi – 1

Green apple – 1/2

Cucumber – approx 3 inches

Chia seeds – 4 teaspoons

Organic wildflower honey – 3 teaspoons

Mint leaves – 5 to 6 leaves

Turmeric powder – 1/4 teaspoon

Lemon juice – 1/2 teaspoon

Cold water – 1 cup

Directions

Prepare the ingredients first. Wash the baby spinach thoroughly . Peel and cut medium sized chunks of the fruits.

In a blender add baby spinach leaves, kiwi, green apples, chia seeds, cucumber and half a cup of cold water. Blend on high for 3-4 minutes.

Now add the remaining ingredients – lemon juice, mint leaves, honey and a dash of turmeric powder. Add more cold water depending on the consistency that you desire. Blend on high for another minute or so. It’s done!!

I added honey much later on top of my drink.

The smoothie was amazing! I did not expect spinach to be so much fun! But the cold water, cucumber and mint really brought a refreshing taste to the entire drink. I loved it. Next time, I’m going to add half a banana as well. I’m guessing it will bring a creamy texture that will bind all the ingredients together very well.

Quick facts

  • Turmeric powder really pops the green color of the smoothie. Curcumin is a polyphenol that is found in turmeric that has many benefits. A few include better regulation of inflammation, blood sugar levels, blood fat levels, and brain levels of the omega-3 fatty acid called DHA (docosahexaenoic acid).
  • Spinach contains Zinc, Vitamin A, Vitamin C, Vitamin E (Alpha Tocopherol), Vitamin K, Thiamin, Riboflavin, Vitamin B6, Folate, Calcium, Iron, Magnesium, Phosphorus, Potassium, Copper and Manganese.

Do we need more reasons to try this smoothie? I think not 🙂
